Palate: A lighter style, yet mouth filling, smooth and fruity from front to mid palate culminating in a long refreshing grapefruit finish.
Cellaring: Don’t cellar this wine. It is simply too delightful now so why try to change it with age.
My Rosé has evolved over the years. I have learnt that very minimal skin contact produces a more refreshing style and doesn’t require any residual sugar to balance out the red wine characters. The pink/red colour of Rosé comes from the skins of the red grapes so, minimal skin contact produces a wine that is very pale in colour.
Pinot Noir 70%, Merlot 18% and Chardonnay 12% The Pinot Noir, Chardonnay and Merlot were all whole bunch pressed. After clarifying it was fermented at cool temperature until the ferment stopped naturally. 12.6% Alc/Vol.
