Winemaker’s Notes:

The 2001 Cabernet grapes came from a Orange vineyard and were less ripe than the field sample had indicated resulting in a wine that was quite high in acid and tannin making the wine too sharp when young but great attributes for a long living wine.  I think it is drinking quite well now, albeit more of a French than Australian style.

Winemaker’s Notes
This is the very first vintage from my vineyard that was planted in 1999.  I held back half of the 2002 vintage and have only recently released it as a Museum wine.

The high elevation cool climate volcanic soil and intense sunshine of Orange produces Cabernet with intense fruit, high natural acid and good tannin structure. I find that judicious Barrel aging in French Oak combined with a small proportion of new American Oak displays fruit intensity up front with a soft tannin finish.

Colour: Red to brick red.

Aroma: Attractive dark fruit and oak aromas laced together with aged characters.

Palate: The palate is mouth filling yet elegant, with up front ripe fruit flavours leading to a dryer mid-late palate finishing with very fine tannins and hints of chocolate and caramel. Winemaking: Picked with ripe black currant and blackberry characters it had seven days cold soak after crushing to extract the rich blackberry flavours. Fermented in contact with its grape skins until dry, it was then aged primarily in French oak for 12 months before bottling.

Cellaring: This is getting into uncharted territory for me. This is an aged release and looks great with all indications that it will continue to develop over time. However the tannins are very soft so I suggest rather than cellar it you enjoy it at your next special occasion.
